Pet Nat (2023) White

100% Chardonnay from 15 year old vines on alluvial soil rocky, with calcium carbonate. Hand harvested, fermentation with indigenous yeasts.

Tirage is made with 20 gr/l of natural grape sugar. Fermentation is carried out in bottles for 5 months and a disgorgement is carried out once the wine is dry.
